- 2 cloves garlic, minced
- 30g fresh parsley, chopped
- 15g fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander

- 1 small head cauliflower (approx. 400g), riced
- 100g cherry tomatoes, quartered
- 100g cucumber, finely diced
- 1 lemon, juice and zest

- 1.To make the tabbouleh, combine the cauliflower rice, half the chopped parsley, all the chopped mint, cherry tomatoes, and cucumber in a large bowl.
- 2.In a small bowl, whisk together 2 tablespoons of olive oil, the lemon juice, and lemon zest. Pour this dressing over the cauliflower mixture, season with salt and pepper, and toss to combine. Set aside.
- 3.In a separate bowl, combine the ground lamb, chopped onion, minced garlic, the remaining parsley, cumin, coriander, salt, and pepper. Use your hands to mix until well combined.
