- 400g sweet potato, peeled and cubed
- 200g carrots, sliced
- 150g dried green lentils, rinsed
- 1 can (400g) chopped tomatoes
- 1 can (400g) chickpeas, rinsed and drained
- 1 liter low-sodium vegetable stock
- Juice of 1/2 lemon
- Salt and black pepper to taste
- Fresh coriander or parsley for garnish (optional)

- 1.Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the diced lamb with salt and pepper, then brown it in batches. Remove the lamb from the pot and set it aside.
- 2.Reduce the heat to medium, add the chopped onion, and sauté for 5-7 minutes until softened. Add the minced garlic, cumin, coriander, turmeric, and cinnamon, and cook for 1 minute until fragrant.
- 3.Return the browned lamb to the pot. Add the cubed sweet potato, sliced carrots, rinsed lentils, and the can of chopped tomatoes.
- 4.Pour in the vegetable stock and bring the stew to a boil. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 35-40 minutes, or until the lentils are tender and the lamb is cooked through.
- 5.Stir in the rinsed chickpeas and cook for an additional 5 minutes to heat them through.
- 6.Turn off the heat. Stir in the fresh lemon juice and adjust the seasoning with salt and pepper as needed. This stew stores perfectly in airtight containers for up to 4 days.
