Ingredienti

• 4 lamb chops (about 1 lb total)
• 1 medium head cauliflower (about 4 cups florets)
• 3 cloves garlic, minced
• 2 tbsp olive oil
• 1 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme, chopped
• 1/4 cup onion, finely diced
• 1 tbsp lemon juice
• Salt to taste
• Black pepper to taste

Istruzioni

1. 1.Preheat oven to 400°F. Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper, then spread on a baking sheet.
2. 2.Roast cauliflower for 20 minutes until tender and lightly browned.
3. 3.While cauliflower roasts, season lamb chops with salt, pepper, rosemary, thyme, and half of the garlic.
4. 4.Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear lamb chops for 3-4 minutes per side until golden brown and cooked to desired doneness.
5. 5.In a blender or food processor, combine roasted cauliflower, onion, remaining garlic, and lemon juice. Blend until smooth and creamy. Adjust seasoning to taste.
6. 6.Serve lamb chops hot with a side of creamy cauliflower mash.
