Ingredienti

• 300g lean ground turkey
• 300g sweet potato, peeled and diced (1 cm cubes)
• 150g carrots, diced (1 cm cubes)
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 100g fresh kale, tough stems removed and chopped
• 30ml olive oil
• Salt to taste
• Freshly ground black pepper to taste (optional, omit for strict AIP reintroduction)
• Fresh parsley, for garnish (optional)

Istruzioni

1. 1.Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
2. 2.Add ground turkey to the skillet. Break it apart with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
3. 3.Stir in the diced sweet potato and carrots. Cook for 10-12 minutes, stirring occasionally, until the vegetables begin to soften. If the pan seems dry, add a splash of water or AIP-compliant broth.
4. 4.Add the chopped kale to the skillet. Cook for 2-3 minutes, stirring, until the greens wilt.
5. 5.Season with salt (and pepper if using). Stir in fresh parsley, if desired.
