Ingredienti

• 1 lb ground turkey
• 2 medium sweet potatoes, diced
• 3 medium carrots, sliced
• 1 small zucchini, diced
• 1 small yellow onion, diced
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tbsp fresh parsley, chopped
• 1 tbsp lemon juice
• 1/2 tsp sea salt
• 1/4 tsp black pepper

Istruzioni

1. 1.Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. 2.Toss diced sweet potatoes, carrots, and zucchini with 1 tbsp olive oil, half the salt, and half the pepper. Spread evenly on the baking sheet and roast for 20–25 minutes, until tender.
3. 3.While veggies roast, heat 1 tbsp olive oil in a skillet over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
4. 4.Add ground turkey to the skillet, breaking it apart as it cooks. Season with remaining salt and pepper. Cook for 7–8 minutes until fully browned.
5. 5.Stir in lemon juice and chopped parsley, then remove from heat.
6. 6.Divide roasted vegetables and turkey mixture evenly into 4 meal-prep containers. Let cool before sealing for storage.
