- 200g cooked mackerel fillets, flaked
- 150g dry green or Puy lentils
- 200g cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely sliced
- 2 tablespoons fresh dill, chopped
- 45ml extra virgin olive oil
- 30ml fresh lemon juice
- 1 clove garlic, minced

- 1.Rinse the lentils, place them in a saucepan with 500ml of water, bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain well and set aside to cool slightly.
