Ingredients

- 400g can chopped tomatoes
- 1 liter vegetable broth or water
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 100g fresh spinach
- Salt and black pepper to taste
- Juice of 1/2 lemon, for serving
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for 5–7 minutes until softened and translucent.
- Add the minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for 1 minute, stirring constantly until the spices are fragrant.
- Stir in the cubed sweet potatoes, rinsed lentils, and the can of chopped tomatoes with their juice.
- Pour in the vegetable broth or water and stir to combine. Increase the heat and bring the stew to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25–30 minutes, or until the lentils and sweet potatoes are tender.
- Stir in the fresh spinach and cook for another 1–2 minutes until it has wilted. Season generously with salt and pepper to taste.
- Remove from heat and stir in the fresh lemon juice. Serve hot.
