- 600g boneless, skinless chicken breast, cut into cubes
- 500g potatoes, scrubbed and cubed
- 250g carrots, sliced
- 1 large bell pepper, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon sweet paprika powder
- 1 teaspoon dried oregano
- 150ml water or vegetable broth
- Salt and black pepper to taste

- 1.Pat the chicken cubes dry and season them generously with salt, pepper, and half of the paprika powder.
- 2.Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- 3.In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- 4.Add the cubed potatoes, sliced carrots, and chopped bell pepper to the skillet. Season with the remaining paprika powder, dried oregano, salt, and pepper. Stir well to coat the vegetables.
- 5.Pour in the water or broth, bring to a simmer, then reduce the heat to low. Cover the skillet and let it cook for 15-20 minutes, or until the potatoes are nearly tender.
- 6.Return the browned chicken to the skillet. Stir everything together, cover, and continue to cook for another 5-10 minutes until the chicken is cooked through and the vegetables are fully tender.
- 7.Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.
