• 34 lbs boneless, skinless chicken breast
• 1 cup olive oil
• 10 large yellow onions, diced
• 50 cloves garlic, minced
• 2 cups fresh lime juice
• 1 cup chili powder
• 1/2 cup ground cumin
• 1/2 cup dried oregano
• 1/4 cup smoked paprika
• 3 tablespoons chipotle powder (adjust to taste)
• Salt and freshly ground black pepper to taste
• Water or low-sodium chicken broth, as needed

1. 1.In several large stockpots over medium-high heat, heat a portion of the olive oil. Season chicken breasts with salt and pepper, then sear in batches for 3-4 minutes per side until golden. Set aside.
2. 2.Add the remaining olive oil and diced onions to the pots. Sauté for 5-7 minutes until softened.
3. 3.Stir in the minced garlic, chili powder, cumin, oregano, smoked paprika, and chipotle powder. Cook for 1 minute until fragrant.
4. 4.Return the seared chicken to the pots. Add the lime juice and enough water or broth to almost cover the chicken.
5. 5.Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the chicken is tender and cooked through.
6. 6.Carefully remove the chicken from the liquid. Using two forks, shred the meat and then return it to the pot, stirring to coat it in the flavorful sauce.
