- 2 cloves garlic, minced
- 2 carrots, diced
- 1 red bell pepper, diced
- 150g green or brown lentils, rinsed

- 1 teaspoon dried oregano
- 1 liter low-sodium vegetable broth
- 400g can chopped tomatoes, no added salt
- 100g fresh spinach

- 1.Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the lamb cubes with pepper. Brown the lamb in batches, then set aside.
