• 4 medium chicken breasts (about 600g total)
• 2 tbsp olive oil
• 2 medium zucchinis, sliced
• 2 medium carrots, sliced
• 1 medium red bell pepper, chopped
• 1 medium yellow bell pepper, chopped
• 1 medium red onion, cut into wedges
• 2 cloves garlic, minced
• 1 tsp dried oregano
• 1 tsp dried thyme
• 1 tsp paprika
• Salt to taste
• Black pepper to taste
• 2 tbsp chopped fresh parsley (optional for garnish)

Upute za pripremu

1. 1.Preheat the oven to 200°C (400°F).
2. 2.Wash and chop all vegetables into bite-sized pieces.
3. 3.Place the chicken breasts on a baking sheet lined with parchment paper.
4. 4.Arrange the chopped vegetables around the chicken.
5. 5.In a small bowl, mix olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
6. 6.Drizzle the oil mixture over the chicken and vegetables, coating evenly.
7. 7.Roast in the oven for about 35-40 minutes, until the chicken is cooked through (internal temp 75°C/165°F) and vegetables are tender.
8. 8.Remove from oven, let rest 5 minutes, and garnish with fresh parsley before serving.
