Ingredients
- 600g boneless, skinless chicken breast, cut into cubes
- 500g potatoes, scrubbed and cubed

Instructions

- Heat the olive oil in a large skillet or pot over medium-high heat. Add the chicken and cook until golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

- Add the cubed potatoes, sliced carrots, and chopped bell pepper to the skillet. Season with the remaining paprika powder, dried oregano, salt, and pepper. Stir well to coat the vegetables.
- Pour in the water or broth, bring to a simmer, then reduce the heat to low. Cover the skillet and let it cook for 15-20 minutes, or until the potatoes are nearly tender.
- Return the browned chicken to the skillet. Stir everything together, cover, and continue to cook for another 5-10 minutes until the chicken is cooked through and the vegetables are fully tender.
- Taste and adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.
