Ingredients
- 100g minced lamb
- 150g sweet potato
- 100g cooked beetroot
- 50g quinoa
- 1 tablespoon olive oil
- 250ml water
Instructions
- Heat the olive oil in a small saucepan over medium heat. Add the minced lamb and cook until browned, breaking it up with a spoon.
- Peel and dice the sweet potato. Add it to the pan along with the rinsed quinoa and 250ml of water.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the sweet potato is tender and the liquid is absorbed.
- Dice the cooked beetroot and stir it into the pan for the last 2 minutes of cooking just to heat through.
- For a smooth purée (for babies), transfer the mixture to a blender and blend until it reaches the desired consistency. For a chunkier mash (for toddlers), use a fork directly in the pan.
- Allow to cool to a safe temperature before serving. Portions can be stored in the fridge for up to 2 days or frozen for later.
