- 600g chicken breast, cut into bite-sized pieces
- 1 large head of cauliflower (approx. 900g)
- 3 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 lemon (zest and juice)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- Salt to taste
- Black pepper to taste

Instructions
- 1.Prepare the cauliflower by cutting it into florets and pulsing in a food processor until it resembles couscous. Alternatively, grate it using a box grater. Set aside.
- 2.In a bowl, season the chicken pieces with 1 tablespoon of olive oil, the lemon zest, chopped thyme, salt, and pepper.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 4.In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant and softened.
- 5.Add the riced cauliflower to the skillet. Cook for 5-7 minutes, stirring often, until it is tender-crisp. Avoid overcooking to prevent it from becoming mushy.
- 6.Return the cooked chicken to the skillet with the cauliflower. Squeeze the lemon juice over the top, add the fresh parsley, and stir to combine everything. Adjust seasoning with salt and pepper if needed and serve hot.
