- 1.In a medium bowl, combine the ground lamb, chopped mint, rosemary, minced garlic, half of the finely chopped red onion, and a generous pinch of sea salt.
- 2.Mix gently with your hands until just combined, being careful not to overwork the meat. Form the mixture into 4 equal-sized patties.
- 3.Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Carefully place the patties in the pan and cook for 4-5 minutes per side, or until browned and cooked through.
- 4.While the patties are cooking, prepare the salad. In a separate bowl, combine the diced cucumber, diced avocado, and the remaining chopped red onion.
- 5.Drizzle the salad with the remaining 2 tablespoons of olive oil and the lemon juice. Toss gently to combine and season with a pinch of salt.
- 6.Serve the warm lamb patties immediately alongside the fresh avocado-cucumber salad.
