Ingrédients
- 500g medium eggplants (about 2)
- 250g lean ground beef
- 150g onion, finely chopped
- 2 cloves garlic, minced
- 150g tomato, chopped
- 30ml olive oil
- 1 tablespoon tomato paste (unsweetened)
- 1 teaspoon dried oregano
- 0.5 teaspoon cumin powder
- Salt and black pepper to taste
- Fresh parsley, for garnish

Instructions
- 1.Preheat your oven to 200°C. Cut the eggplants in half lengthwise and score the flesh in a diamond pattern without piercing the skin.
- 2.Brush the cut sides of the eggplant with half of the olive oil, season with salt, and place them cut-side down on a baking sheet.
- 3.Bake for 20-25 minutes until the flesh is very tender. While they bake, prepare the filling.
- 4.Heat the remaining olive oil in a skillet over medium heat. Sauté the chopped onion for 5 minutes until soft, then add the minced garlic and cook for 1 more minute.
- 5.Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat.
- 6.Stir in the chopped tomato, tomato paste, oregano, and cumin. Season with salt and pepper and let it simmer for 5-7 minutes until the mixture thickens.
- 7.Once the eggplants are cooked, gently press down the flesh with a spoon to create a 'boat' for the filling.
- 8.Spoon the beef mixture evenly into the eggplant boats.
- 9.Return the stuffed eggplants to the oven and bake for an additional 10-15 minutes to allow the flavors to meld.
- 10.Garnish with freshly chopped parsley before serving.
