Ingrédients

• 1 cup cooked chickpeas
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1/2 red onion, finely sliced
• 2 tbsp extra virgin olive oil
• 1 tbsp lemon juice
• 1 tsp dried oregano
• Salt to taste
• Black pepper to taste
• 2 cups mixed salad greens

Instructions

1. 1.Rinse and drain the cooked chickpeas.
2. 2.Wash and slice the cherry tomatoes in half, dice the cucumber, and finely slice the red onion.
3. 3.In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and mixed greens.
4. 4.In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
5. 5.Pour the dressing over the salad and toss everything gently until well combined.
6. 6.Serve immediately as a light and nutritious Mediterranean meal.
