Ingrédients

• 2 cups cooked quinoa
• 1 can (15 oz) black beans, rinsed and drained
• 1 medium sweet potato, diced
• 1 red bell pepper, chopped
• 1 small red onion, chopped
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 1 teaspoon smoked paprika
• Salt and black pepper to taste
• Juice of 1 lemon
• Fresh parsley or cilantro for garnish

Instructions

1. 1.Preheat oven to 400°F (200°C).
2. 2.Toss diced sweet potato, bell pepper, and red onion with olive oil, garlic, smoked paprika, salt, and pepper.
3. 3.Spread vegetables on a baking sheet and roast for 20-25 minutes until tender and lightly browned.
4. 4.While vegetables roast, warm the black beans in a small pan with a pinch of salt and pepper.
5. 5.Assemble bowls with a base of quinoa, topped with roasted vegetables and black beans.
6. 6.Drizzle with fresh lemon juice and garnish with chopped parsley or cilantro before serving.
