Ingrédients

• 2 cups fresh spinach
• 1 cup cooked chickpeas
• 1 small cucumber, diced
• 1 medium tomato, diced
• 1/4 small red onion, finely chopped
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 1/2 tsp ground cumin
• 1/4 tsp black pepper
• 1/4 tsp salt (optional)
• 1 tbsp fresh parsley, chopped

Instructions

1. 1.Wash and pat dry the spinach, cucumber, tomato, and parsley.
2. 2.Dice the cucumber and tomato, and finely chop the onion and parsley.
3. 3.In a large bowl, combine chickpeas, spinach, cucumber, tomato, and onion.
4. 4.In a small bowl, whisk together olive oil, lemon juice, cumin, pepper, and optional salt.
5. 5.Pour the dressing over the salad, toss well, and garnish with parsley.
6. 6.Serve immediately as a fresh, balanced meal.
