- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 30g fresh parsley, chopped
- 15g fresh mint, chopped
- 2 tablespoons extra virgin olive oil, divided
- 1 tablespoon lemon juice

- 1.In a medium bowl, combine the ground lamb, cooked lentils, half of the onion, all the minced garlic, half the parsley, half the mint, cumin, and coriander. Season with salt and pepper. Mix gently with your hands until just combined.
- 2.Divide the mixture into 4 equal portions and shape them into round patties, about 2 cm thick.
- 3.Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Cook the patties for 4-5 minutes per side, until golden brown and cooked through.
- 4.While the patties cook, prepare the drizzle. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, the lemon juice, the remaining chopped onion, parsley, and mint. Season lightly with salt and pepper.
- 5.Transfer the cooked patties to serving plates. Spoon the fresh herb drizzle over the top and serve immediately, perhaps with a side of steamed vegetables or a simple green salad.
