- 2 zucchini
- 2 red bell peppers
- 1 large onion
- 3 cloves garlic
- 3 tbsp olive oil
- 1 lemon
- 1 tsp paprika

Instructions
- 1.Preheat oven to 400°F and lightly grease a baking sheet with 1 tbsp olive oil.
- 2.Chop eggplant, zucchini, bell peppers, and onion into bite-sized pieces. Toss with 2 tbsp olive oil, minced garlic, paprika, oregano, salt, and pepper.
- 3.Spread vegetables evenly on the baking sheet and roast for 20–25 minutes, stirring halfway through.
- 4.While vegetables roast, season chicken breasts with salt, pepper, lemon juice, and a drizzle of olive oil.
- 5.Heat a grill pan or skillet over medium-high heat. Cook chicken for 5–6 minutes per side until golden and fully cooked.
- 6.Serve grilled chicken alongside roasted vegetables, garnished with fresh lemon wedges.
