- 1 bay leaf

- 1.Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 8-10 minutes until softened and lightly browned.
- 2.Add the minced garlic and dried thyme, and cook for another minute until fragrant.
- 3.Stir in the rinsed lentils, canned chopped tomatoes, vegetable broth, and the bay leaf. Season with a pinch of salt and pepper.
