Ingredients
- 200g butternut squash, peeled and cubed
- 1 medium apple, peeled, cored, and cubed
- 50g red lentils, rinsed
- 350ml water
- 1 pinch ground cinnamon (optional)
Instructions
- Place the cubed butternut squash, cubed apple, and rinsed red lentils into a small saucepan.
- Add the water, ensuring all ingredients are just covered. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the squash is very tender and the lentils are fully cooked and soft.
- Carefully transfer the mixture to a high-speed blender or use an immersion blender directly in the pot (after letting it cool slightly).
- Blend until completely smooth, adding a splash more boiled water if needed to reach your desired consistency. Allow to cool completely before serving.
