- 1 small zucchini (approx. 150g)
- 1 tbsp finely chopped fresh mint
- 1 tbsp olive oil

- 1.Peel the sweet potato, chop it into chunks, and boil or steam until very tender, about 15 minutes. Drain well and mash thoroughly in a large bowl.
- 2.While the potato cooks, finely grate the zucchini. Place the grated zucchini in a clean cloth or paper towel and squeeze out as much excess liquid as possible.
- 3.Add the lamb mince, squeezed zucchini, and finely chopped mint to the bowl with the mashed sweet potato. Add a tiny pinch of pepper if using. Mix well with your hands until everything is combined.
- 4.Form the mixture into 10-12 small, toddler-friendly patties, about 4-5 cm in diameter.
- 5.Heat the olive oil in a non-stick frying pan over medium heat. Cook the patties in batches for 4-5 minutes per side, until golden brown and cooked through completely.
- 6.Remove the patties from the pan and let them cool on a paper towel before serving. They can be stored in the fridge for 2-3 days or frozen.
