Ingredientes

• 300g ground turkey
• 250g sweet potatoes, peeled and diced
• 150g carrots, peeled and diced
• 200g zucchini, diced
• 1 medium onion, chopped
• 2 cloves garlic, minced
• 30ml olive oil
• 5g turmeric powder
• 3g ginger powder
• 5g sea salt
• Fresh parsley, chopped (for garnish, optional)

Instrucciones

1. 1.Heat olive oil in a large skillet or pan over medium heat. Add chopped onion and sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant.
2. 2.Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain any excess fat if necessary.
3. 3.Stir in diced sweet potatoes and carrots. Add turmeric powder, ginger powder, and sea salt. Mix well to coat the vegetables and turkey.
4. 4.Add about 50ml of water or AIP-compliant broth to the skillet, cover, and reduce heat to low. Let it simmer for 10-12 minutes, or until sweet potatoes and carrots begin to soften. Stir occasionally.
5. 5.Add diced zucchini to the skillet, mix well, and continue to simmer uncovered for another 5-7 minutes, or until all vegetables are tender-crisp.
6. 6.Taste and adjust seasoning if needed. Serve hot, garnished with fresh chopped parsley if desired.
