• 1 pound boneless skinless chicken breast
• 2 cups cooked brown rice
• 2 cups broccoli florets
• 1 medium carrot, thinly sliced
• 1 small onion, thinly sliced
• 2 garlic cloves, minced
• 2 tablespoons low-sodium soy sauce
• 1 tablespoon olive oil
• 1 tablespoon lemon juice
• 1 teaspoon grated fresh ginger
• 1 teaspoon honey
• Salt and black pepper to taste

Instrucciones

1. 1.Cook brown rice according to package instructions and set aside.
2. 2.In a small bowl, whisk together soy sauce, lemon juice, honey, garlic, ginger, and a pinch of black pepper to make the light teriyaki sauce.
3. 3.Heat olive oil in a large skillet over medium heat. Add chicken breast pieces and cook for 5-6 minutes until golden brown and cooked through.
4. 4.Add sliced onion, carrot, and broccoli to the skillet and sauté for 4-5 minutes until tender-crisp.
5. 5.Pour the teriyaki sauce into the skillet, stir well, and cook for 2 minutes until everything is coated and warmed through.
6. 6.Serve the chicken and vegetables over bowls of warm brown rice.
