Ingredientes

• 2 chicken breasts (about 200g each)
• 1 tbsp olive oil
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp dried thyme
• 1/2 tsp black pepper
• 1/2 tsp sea salt
• 1 zucchini, sliced
• 1 red bell pepper, chopped
• 1 small sweet potato, diced
• 1 tbsp olive oil

Instrucciones

1. 1.Preheat the oven to 200°C (400°F).
2. 2.Toss zucchini, bell pepper, and sweet potato with 1 tbsp olive oil, salt, and pepper. Spread evenly on a baking tray.
3. 3.Roast vegetables for 20–25 minutes until tender and lightly browned.
4. 4.While vegetables roast, season chicken breasts with paprika, garlic powder, thyme, salt, and pepper.
5. 5.Heat a grill pan over medium-high heat and brush lightly with olive oil.
6. 6.Grill chicken breasts 5–6 minutes per side until cooked through and juices run clear.
7. 7.Serve grilled chicken alongside roasted vegetables.
