Ingredientes
- 200g red lentils, dry
- 400g sweet potato (about 1 large)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- Small bunch of fresh parsley, chopped

Instrucciones
- 1.Rinse the red lentils and cook them in 500ml of water for about 15-20 minutes until soft and the water is absorbed. Drain any excess water and set aside.
- 2.Meanwhile, peel and chop the sweet potato into cubes. Boil or steam for 15 minutes until very tender. Drain and mash well in a large bowl.
- 3.Heat 1 tablespoon of olive oil in a pan over medium heat. Sauté the chopped onion for 5-7 minutes until soft, then add the minced garlic and cook for another minute until fragrant.
- 4.Add the cooked lentils, sautéed onion and garlic, ground cumin, coriander, paprika, and chopped parsley to the mashed sweet potato. Season with salt and pepper and mix until well combined.
- 5.Preheat your oven to 200°C (180°C fan). Line a baking sheet with parchment paper. Using your hands, form the mixture into 8 equal-sized patties and place them on the sheet.
- 6.Brush the tops of the patties with the remaining 1 tablespoon of olive oil. Bake for 20-25 minutes, flipping halfway through, until golden brown and firm to the touch. Serve warm.
