- 450g lean ground lamb
- 1 large onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 150g brown lentils, rinsed
- 500ml low-sodium beef or vegetable broth
- 2 tbsp tomato puree
- 1 tsp dried rosemary
- 2 tbsp olive oil
- Salt and freshly ground black pepper to taste
- 800g sweet potatoes, peeled and cubed
- 60ml milk or unsweetened almond milk

- 1.Preheat your oven to 200°C. Place the cubed sweet potatoes in a large pot, cover with water, bring to a boil, and cook for 15-20 minutes until very tender. Drain thoroughly.
- 2.While the potatoes cook, heat 1 tbsp of olive oil in a large pan over medium-high heat. Add the ground lamb and cook until browned. Drain off any excess fat.
- 3.Add the chopped onion and carrots to the pan with the lamb. Sauté for 6-8 minutes until softened. Stir in the minced garlic and cook for one more minute until fragrant.
- 4.Stir in the tomato puree, rinsed lentils, broth, and rosemary. Season with salt and pepper. Bring to a simmer, then reduce heat, cover, and cook for 25 minutes until lentils are tender and the sauce has thickened.
- 5.Mash the cooked sweet potatoes with the remaining 1 tbsp olive oil and milk until smooth and creamy. Season with a pinch of salt.
- 6.Transfer the lamb and lentil mixture into a 2-liter ovenproof baking dish. Spread the sweet potato mash evenly over the top.
- 7.Bake for 20-25 minutes, or until the topping is lightly golden and the filling is bubbling at the edges. Let it rest for 5 minutes before serving.
