- Bring the mixture to a simmer, then reduce the heat to low, cover the skillet, and let it cook for 10–12 minutes until the sweet potato is tender.
- Stir in the rinsed lentils and cook for another 2–3 minutes to heat them through.
- Remove the skillet from the heat. Fold in the fresh spinach until it wilts, then stir in the fresh parsley and lemon juice. Adjust seasoning if needed and serve warm.
