- 1.Preheat your oven to 200°C. Peel and chop the carrots into bite-sized pieces. Toss them in a roasting tray with 15ml of olive oil, salt, and pepper. Roast for 25-30 minutes, or until tender and lightly caramelized.

- 3.Heat the remaining 15ml of olive oil in a large skillet over medium-high heat. Carefully place the lamb chops in the hot pan and sear for 3-4 minutes per side for a medium-rare finish. Remove from the pan and let them rest on a plate for 5 minutes.
- 4.While the lamb rests, cook the peas. Bring a small pot of water to a boil, add the frozen peas, and cook for 2-3 minutes until bright green and tender. Drain immediately.
- 5.To make the purée, add the cooked peas, fresh mint leaves, a squeeze of lemon juice, and a pinch of salt to a blender or food processor. Blend until smooth, adding a tablespoon of water if needed to reach your desired consistency.
- 6.Serve the rested lamb chops alongside the roasted carrots with a generous spoonful of the fresh mint-pea purée.
