Ingredients
- 300g lamb mince
- 400g sweet potato, peeled and diced
- 200g zucchini, diced
- 150g carrot, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground turmeric
- 2 tbsp olive oil
- 50g kale, stems removed and chopped
- 1 handful fresh parsley, chopped
- Juice of 1/2 lemon
- Salt to taste

Instructions
- 1.Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the garlic and ginger, cooking for another minute until fragrant.
- 2.Add the diced sweet potato and carrot to the skillet. Cook for 8-10 minutes, stirring occasionally, until they begin to soften.
- 3.Add the lamb mince to the pan. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
- 4.Stir in the diced zucchini, ground turmeric, and a pinch of salt. Cook for another 5 minutes until the zucchini is tender.
- 5.Add the chopped kale and stir until it wilts, which takes about 1-2 minutes.
