Ingredients
- 300g cod fillets (2 fillets)
- 200g carrots, chopped
- 200g parsnips, chopped
- 250g new potatoes, halved or quartered
- 1 large leek, sliced
- 30ml olive oil
- 15g Dijon mustard
- 15g fresh dill, chopped
- 1 lemon
- 2 cloves garlic, minced
- Salt and black pepper to taste
Instructions
- Preheat your oven to 200°C. In a large baking dish, toss the chopped carrots, parsnips, and potatoes with 15ml of olive oil, salt, and pepper. Roast for 20 minutes until they begin to soften.
- While the vegetables roast, prepare the dressing. In a small bowl, whisk together the remaining 15ml olive oil, Dijon mustard, minced garlic, the juice and zest of the lemon, and most of the chopped dill.
- After 20 minutes, remove the dish from the oven. Add the sliced leek to the vegetables and toss to combine.
- Pat the cod fillets dry, season them lightly with salt and pepper, and place them on top of the vegetables in the baking dish.
- Drizzle the dill and mustard dressing evenly over the cod fillets and vegetables.
- Return the dish to the oven and bake for another 12–15 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with the remaining fresh dill before serving warm.
