- 1 large head of cauliflower (approx. 900g)
- 3 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 lemon (zest and juice)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped

Anleitung
- 1.Prepare the cauliflower by cutting it into florets and pulsing in a food processor until it resembles couscous. Alternatively, grate it using a box grater. Set aside.
- 2.In a bowl, season the chicken pieces with 1 tablespoon of olive oil, the lemon zest, chopped thyme, salt, and pepper.
- 3.Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
