- 200ml tomato passata (strained tomatoes)
- 15ml olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper to taste
- Juice of 1/2 lemon
Instructions
- Heat the olive oil in a large non-stick skillet or pan over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened.
- Add the minced garlic and ground turkey to the skillet. Break up the turkey with a spoon and cook until browned all over, about 5-6 minutes.
- Stir in the chopped red bell pepper, dried oregano, and ground cumin. Cook for another 2-3 minutes until the pepper starts to soften.
- Pour in the tomato passata and the drained lentils. Season with salt and pepper. Bring to a simmer, then reduce the heat to low, cover, and let it cook for 5 minutes for the flavors to meld.
- Remove from heat. Stir in the fresh spinach until it wilts. Squeeze the lemon juice over the top and stir one last time before serving.
