Ingredients
- 300g Ground Lamb
- 1 large Red Bell Pepper
- 1 large Green Bell Pepper
- 1 small Red Onion
- 2 medium Zucchini
- 150g Cherry Tomatoes
- 30g Fresh Parsley
- 15g Fresh Basil
- 3 cloves Garlic
- 1 whole Lemon
- 60ml Extra Virgin Olive Oil
- 15g Capers, drained
- 30g Kalamata Olives, pitted
- Salt, to taste
- Black Pepper, to taste
- Dried Oregano, to taste
Instructions
- Prepare the Lamb Skewers: Form the ground lamb into small meatballs (about 2.5 cm diameter). Cut the peppers and onion into pieces of similar size. Thread lamb, peppers, and onion alternately onto skewers. Season with salt, black pepper, and drizzle lightly with olive oil.
- Prepare Zucchini Ribbons: Use a vegetable peeler or mandoline to slice zucchini lengthwise into thin ribbons. Arrange on a serving platter.
- Make the Fresh Herb Salsa: Finely chop cherry tomatoes, parsley, basil, garlic, capers, and olives. Mix in a bowl with lemon zest, lemon juice, 30ml olive oil, salt, pepper, and dried oregano.
- Cook the Skewers: Heat a grill pan or outdoor grill over medium-high heat. Grill skewers for 8–12 minutes, turning occasionally, until lamb is cooked through and vegetables are tender-crisp with grill marks.
- Assemble & Serve: Lay zucchini ribbons on plates, top with skewers, and spoon generous salsa over the top. Serve hot and enjoy!
