Light Balkan-Style Burek with Spinach and Onion
If you've ever strolled through a Balkan market, you've likely caught the irresistible aroma of freshly baked burek. This traditional pastry, often filled with meat or cheese, is a beloved staple across the region.
Our version takes a lighter, healthier approach—using delicate phyllo pastry, fresh spinach, and caramelized onion to create a dish that's just as satisfying, but easier on the waistline. Crispy, golden, and nutritious, it's perfect for lunch, dinner, or even a snack to share.
Let's dive into this wholesome twist on a Balkan classic that you can easily recreate at home.

Ingredients
- 8 sheets thin pastry dough (like phyllo)
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Lightly brush a baking dish with olive oil.
- Heat 1 teaspoon olive oil in a skillet, add onion, and sauté until soft.
- Add garlic and spinach, cook until spinach wilts, then season with salt and pepper.
- Lay out a sheet of phyllo, lightly brush with olive oil, stack a few layers, and spread spinach mixture evenly over it.
- Roll the layered pastry with filling into a log shape or coil and place into the baking dish.
- Repeat with the remaining pastry and filling, then brush tops with a little olive oil.
- Bake for 25–30 minutes until golden brown and crisp. Let cool slightly before slicing.
Tips & Substitutions
- For added creaminess, mix in a small amount of crumbled feta with the spinach filling.
- If phyllo sheets tear, simply overlap them—once baked, no one will notice.
- To make ahead, assemble the burek, cover tightly, and refrigerate before baking fresh the next day.
