Ingredients
- 2 medium zucchinis
- 400g chicken breast
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- 1.Spiralize the zucchinis into noodles and set aside.
- 2.Slice chicken breast into bite-sized pieces and season with paprika, oregano, salt, and pepper.
- 3.Heat 1 tbsp olive oil in a large skillet over medium heat. Cook chicken until golden brown and fully cooked, about 8–10 minutes. Remove and set aside.
- 4.In the same skillet, add butter, remaining olive oil, and minced garlic. Sauté until fragrant, about 1 minute.
- 5.Add zucchini noodles to the skillet and toss gently for 2–3 minutes until just tender.
- 6.Return chicken to the skillet, mix well, and cook for another 2 minutes.
- 7.Garnish with fresh parsley if desired and serve warm.
