Ingredients
- 200g chicken breast, sliced
- 2 cups broccoli florets
- 1 cup bell pepper, sliced
- 1 small zucchini, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp low-sodium soy sauce
- 1 tsp ground ginger
- 1/4 tsp black pepper
- 1/4 tsp salt (optional)
Instructions
- 1.Heat 1 tbsp olive oil in a large pan over medium heat.
- 2.Add sliced chicken breast and cook for 6-7 minutes until fully cooked and lightly browned. Remove and set aside.
- 3.In the same pan, add the remaining olive oil, garlic, and ginger. Sauté for 1 minute until fragrant.
- 4.Add broccoli, bell pepper, and zucchini. Stir-fry for 5-6 minutes until tender-crisp.
- 5.Return chicken to the pan, add low-sodium soy sauce, black pepper, and optional salt, then stir well.
- 6.Cook for an additional 2-3 minutes to blend flavors. Serve warm.
