Ingredients
- 4 salmon fillets (120g each)
- 1 lemon, sliced
- 2 tbsp olive oil
- 1 cup quinoa
- 2 cups fresh spinach
- 2 cups water
- 1 tsp dried oregano
- 1 tsp garlic powder
- Salt to taste
- Black pepper to taste
Instructions
- 1.Preheat the oven to 190°C (375°F).
- 2.Rinse quinoa under cold water, then cook in a saucepan with 2 cups water. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until fluffy.
- 3.Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with 1 tbsp olive oil, season with salt, pepper, oregano, garlic powder, and top with lemon slices.
- 4.Bake salmon for 15-18 minutes until cooked through and flaky.
- 5.In a skillet, heat 1 tbsp olive oil over medium heat. Add spinach and sauté for 2-3 minutes until wilted. Season lightly with salt and pepper.
- 6.Serve baked salmon with quinoa and sautéed spinach on the side.
