Ingredients
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 cup bell pepper strips
- 1 cup snow peas
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 2 cups cooked brown rice
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Optional: sesame seeds, chili flakes
Instructions
- 1.Heat olive oil in a large skillet or wok over medium-high heat.
- 2.Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- 3.Add broccoli, carrots, and bell peppers, and cook for 4-5 minutes, stirring frequently.
- 4.Add snow peas and continue to stir-fry for 2-3 minutes until vegetables are crisp-tender.
- 5.Stir in soy sauce and sesame oil, mix well, and season with salt, pepper, and optional chili flakes.
- 6.Serve hot over cooked brown rice and garnish with sesame seeds if desired.
