Ingredients
- 1 cup red lentils
- 2 cups spinach, chopped
- 1 cup cauliflower florets
- 1 medium carrot, diced
- 1 medium onion, finely chopped
- 2 medium tomatoes, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp olive oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp ground coriander
- 1/2 tsp chili powder (optional)
- 1/2 tsp garam masala
- 4 cups water
- Salt to taste
- Fresh cilantro for garnish
Instructions
- 1.Rinse the lentils under cold water until the water runs clear.
- 2.Heat olive oil in a large pot over medium heat and add cumin seeds until fragrant.
- 3.Add onion, garlic, and ginger; sauté until golden.
- 4.Stir in tomatoes, turmeric, coriander, chili powder, and cook until tomatoes soften.
- 5.Add carrots, cauliflower, and lentils. Stir well and pour in water.
- 6.Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are soft.
- 7.Stir in spinach and cook for 5 more minutes.
- 8.Add garam masala and adjust salt to taste.
- 9.Garnish with fresh cilantro before serving.
