Ingredients
- 1 cup carrots, peeled and chopped
- 1 cup sweet potato, peeled and chopped
- 1/2 cup peas
- 1/2 cup water
- Pinch of mild herbs (optional, such as parsley)
Instructions
- 1.Wash, peel, and chop the carrots and sweet potato into small cubes.
- 2.Place carrots, sweet potato, and peas in a small pot with water.
- 3.Bring to a gentle simmer and cook for about 15 minutes, until vegetables are very soft.
- 4.Transfer the cooked vegetables and liquid into a blender or food processor.
- 5.Blend until smooth, adding a little more water if needed to reach desired texture.
