Ingredients
- 2 cups cooked chickpeas
- 3 cups fresh spinach
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/2 tsp salt
- 3 cups vegetable broth
Instructions
- 1.Heat olive oil in a large pot over medium heat.
- 2.Add the chopped onion and sauté for 4–5 minutes until translucent.
- 3.Stir in garlic, cumin, smoked paprika, turmeric, salt, and black pepper, cooking for 1 minute.
- 4.Add chickpeas and vegetable broth, bring to a gentle simmer.
- 5.Cook uncovered for 15 minutes, stirring occasionally.
- 6.Add the spinach and cook for another 2–3 minutes until wilted.
- 7.Adjust seasonings to taste and serve warm.
