- 1 large eggplant, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 large onion, chopped
- 3 medium tomatoes, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tbsp fresh parsley, chopped
- Salt to taste

Instructions
- 1.Heat olive oil in a large pan over medium heat.
- 2.Add onion and garlic, sauté until softened.
- 3.Add eggplant and cook for 5 minutes until slightly tender.
- 4.Stir in zucchini and bell peppers, cook for another 5 minutes.
- 5.Add tomatoes, thyme, oregano, salt, and pepper, then reduce heat to low.
- 6.Cover and simmer for 20 minutes, stirring occasionally.
- 7.Sprinkle with fresh parsley before serving.
