Ingredients
- 4 salmon fillets (about 150g each)
- 2 tbsp olive oil
- 3 cups fresh spinach
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt to taste
- Black pepper to taste
Instructions
- 1.Preheat the oven to 190°C (375°F).
- 2.Place salmon fillets on a baking sheet lined with parchment paper.
- 3.Drizzle salmon with 1 tbsp olive oil, lemon juice, oregano, thyme, salt, and pepper.
- 4.Bake the salmon for 18–20 minutes until cooked through and flaky.
- 5.While salmon bakes, heat 1 tbsp olive oil in a pan over medium heat.
- 6.Add minced garlic and cook for 1 minute until fragrant.
- 7.Add spinach and sauté for 2–3 minutes until wilted. Season with salt and black pepper.
- 8.Serve baked salmon alongside the sautéed spinach.
