Ingredients
- 1 cup quinoa
- 2 cups broccoli florets
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 carrot, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt to taste
- Black pepper to taste
Instructions
- 1.Rinse quinoa under cold water and cook according to package instructions (about 15 minutes).
- 2.While quinoa is cooking, preheat oven to 190°C (375°F).
- 3.Toss broccoli, bell pepper, zucchini, and carrot with olive oil, garlic powder, paprika, salt, and black pepper.
- 4.Spread vegetables on a baking sheet and roast for 20 minutes until tender.
- 5.Divide cooked quinoa into 4 containers and top with roasted vegetables.
- 6.Allow to cool before sealing containers for meal prep storage.
