Ingredients
- 250g whole wheat pasta
- 2 cups zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- 1.Bring a large pot of water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- 2.In a large skillet, heat olive oil over medium heat.
- 3.Add chopped onion and garlic, sauté until fragrant and softened.
- 4.Add zucchini and cook for 5 minutes until tender.
- 5.Stir in cherry tomatoes, oregano, basil, salt, and black pepper. Cook for another 3-4 minutes until tomatoes soften.
- 6.Add the cooked pasta to the skillet and toss everything together until well combined.
- 7.Garnish with fresh parsley before serving.
