Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 carrot, sliced
- 2 cups spinach
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt to taste
- Black pepper to taste
Instructions
- 1.Rinse quinoa under cold water and drain.
- 2.In a saucepan, bring 2 cups water to a boil, add quinoa, reduce heat, cover, and cook for 15 minutes or until fluffy.
- 3.While quinoa cooks, heat olive oil in a skillet over medium heat.
- 4.Add garlic, zucchini, bell pepper, and carrot, sauté for 6–8 minutes until tender.
- 5.Add spinach and cook for another 2 minutes until wilted.
- 6.Season vegetables with oregano, salt, and black pepper.
- 7.Fluff quinoa with a fork and serve topped with sautéed vegetables.
