Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup spinach, chopped
- 1 medium carrot, grated
- 1 medium zucchini, diced
- 1 cup chickpeas, cooked
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp cumin
- Salt to taste
- Black pepper to taste
Instructions
- 1.Rinse the quinoa under cold water.
- 2.In a medium pot, bring 2 cups of water to a boil and add quinoa. Reduce heat, cover, and simmer for 15 minutes until fluffy.
- 3.While quinoa cooks, heat olive oil in a pan over medium heat. Add zucchini and carrot, sauté for 5 minutes until tender.
- 4.Add spinach and chickpeas to the pan, season with cumin, salt, and pepper, and cook for another 3 minutes.
- 5.Fluff the cooked quinoa with a fork and transfer to bowls.
- 6.Top with the sautéed vegetables and chickpeas, drizzle with lemon juice, and serve warm.
